Yummy Cookie Recipe From Our Friends at Green America:
Make your Santa cookies or your cookie exchange this year Fair Trade! Instead of swapping the same old cookies with your friends or giving Santa the same taste you do every year, why not spruce it up with a great cookie recipe?!

Fair Trade Chocolate Candy Cane Cookies
(adapted from Bon Appétit)

Cookie Ingredients
1 3/4 cups all purpose flour
1/2 cup Fair Trade Cocoa powder from Equal Exchange
1/4 teaspoon salt
1 cup Fair Trade Sugar from Wholesome Sweeteners
3/4 cup unsalted butter
1 large egg

Filling Ingredients
1 cup plus 2 tablespoons powdered sugar
3/4 cup unsalted butter
3/4 teaspoon peppermint extract
2 drops red food coloring
1/2 cup crushed red-and-white-striped candy canes or hard peppermint candies (about 4 ounces)
Preparation

Preheat oven to 350°F.

For cookies: Using an electric mixer, beat sugar and butter in large bowl until well blended. Beat in egg. Add dry ingredients; beat until blended. Refrigerate dough 1 hour.

Line 2 baking sheets with parchment paper. Scoop level tablespoonful of dough, then roll into smooth balls. Using the bottom of a glass, flatten each ball. Bake for 11 minutes (do not overbake or cookies will become too crisp).

For filling: Using an electric mixer, beat powdered sugar and butter in medium bowl. Add peppermint extract and food coloring. Spread 2 teaspoons filling evenly over 1 cookie then top with another cookie, pressing gently to adhere.

Place crushed candy canes on plate. Roll edges of cookie sandwiches in crushed candies. Yield: 18 sandwich cookies
